B is for Burgundy Beef Gumbo

Santa’s bringing you readers an alphabet gumbo — much tastier than alphabet soup. The gift started yesterday with the recipe for Appetizer Warm Gumbo Dip. By the time Christmas arrives you’ll have 26 gumbo recipes from A to Z. Today’s gumbo is Burgundy Beef, which will be followed by Crock Pot Chicken and Ham, Duck & Andouille, East Bay, File, Gumbo-laya, Ham & Seafood, Incredible Emeril Chicken & Smoked Sausage, John Besh, 24 Karat, LuLu’s, Marion’s File Seafood, New Orleans Best, Okra & Seven Steak, Pork Roast, Quick Half-Hour, Real Estate, Sausage & Dove, Town Point Crab, eUla Maes, Vegetarian, Wild Game, Xtra Generation X, Ya Ya and Z-Herbes. I’ve rounded up some of the most unique gumbo recipes on the planet— from old family favorites, church and club cookbooks, some top chefs, other bloggers and food critics.

Burgundy Beef Gumbo comes from Gwen McKee’s The

Little Gumbo Book, first edition 1986. Santa brought a copy to me last Christmas. Eric of the blog Dog Street Comics featured the recipe under the name Beef and Ham Gumbo in a 2012 post, with two changes – he used Creole seasoning and sweet red wine. Gwen blends her own special K Cajun Seasoning instead of using store-bought Creole seasoning and calls for burgundy. Click here to start cooking “B”  for Burgundy Beef Gumbo

By the way, The Little Gumbo Book is a terrific little cookbook with 27 recipes and makes a great Christmas gift, especially if it’s paired with my book The Gumbo Diaries! After all, B is also for Book.

Merry Christmas
